Roasted Cabbage With Feta, Cherries and Pistachios
Roasting the cabbage caramelizes its edges and pulls out a sweetness you won't expect. The dried cherries bring chew and tart, the feta cuts through the spice, and Cherry Pistache ties it all together. Serve it warm or room temperature — it holds beautifully either way.
Ingredients:
1 medium red cabbage
3 tbsp EVOO
1/2 tsp sea salt
3/4 creamy feta, crumbled
2 tbsp pistachios, shelled
2 tbsp dried cherries
Dressing
2 tbsp Cherry Pistache salsa macha
1tbsp EVOO
1tbsp ACV
1tsp dijon mustard
lemon zest of half a lemon
sea salt
Instructions
1. Heat oven to 425°F and line a sheet pan with parchment.
2. Halve the cabbage and cut each half into 1-inch wedges.
3. Lay wedges on their sides, drizzle generously with olive oil, and season with sea salt.
4. Roast 35 minutes, flipping halfway.
5. While the cabbage roasts, combine ACV, mustard, salt, olive oil, lemon zest, and Cherry Pistache in a mason jar. Seal and shake.
6. Arrange roasted cabbage on a flat dish. Top with feta, pistachios, dried cherries, and dressing. Serve warm or at room temperature.
